Ingredients for Mushroom Risotto

    • 500g (1 lb) mushrooms, sliced
    • 3 tablespoons butter
    • 2 tablespoons olive oil
    • 2 garlic cloves, minced
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon butter
    • 1 garlic clove, minced
    • 2 shallots or 1/2 onion, finely chopped
    • 1/4 cup dry white wine
    • 1 1/4 cups Arborio rice
    • 5 cups low-sodium chicken broth, warmed
    • 1/2 cup heavy cream (optional)
    • 2 tablespoons butter (optional)
    • 1/2 cup grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • Fresh parsley or chives, finely chopped
    • Additional grated Parmesan cheese

Instructions for Making Mushroom Risotto

1. Prepare the Mushrooms:

  • In a large pot, heat 1 tablespoon of olive oil and half of the butter over high heat. Add half the mushrooms and cook until golden brown, about 4 minutes.
  • Add half the garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook for another 1-2 minutes until the garlic is fragrant. Transfer to a bowl and repeat with the remaining mushrooms.

2. Cook the Risotto:

  • Reduce heat to medium. In the same pot, melt the remaining butter. Add the garlic and shallots, cooking until the shallots are translucent, about 2 minutes.
  • Pour in the white wine and let it simmer until it reduces by half. Stir in the Arborio rice and cook for 1 minute until the rice is lightly toasted.
  • Add 1 cup of the warm broth to the rice, stirring occasionally until it is mostly absorbed. Continue adding the broth, one cup at a time, stirring frequently, until the rice is creamy and cooked through, about 18-20 minutes.

3. Finish the Dish:

  • Stir in the cream and butter for a richer texture (optional).
  • Mix in the grated Parmesan cheese, salt, and pepper. Fold in half of the cooked mushrooms.
  • Taste and adjust seasoning if necessary.

4. Serve:

  • Divide the risotto into bowls and top with the remaining mushrooms. Garnish with fresh parsley or chives and additional grated Parmesan cheese. Serve immediately.
