Mushroom Avocado Toast Recipe


  • 2 ripe avocados
  • 4 slices of whole grain bread
  • 1/2 lemon (juice)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup mushrooms, sliced (cremini, button, or your favorite variety)
  • 1 small tomato, sliced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter or olive oil for sautéing mushrooms
  • Fresh basil leaves for garnish


1. Prepare the Avocado:

  • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
  • Add the lemon juice, sea salt, black pepper, and red pepper flakes. Mash the avocado with a fork until you achieve a chunky consistency.

2. Sauté the Mushrooms:

  • Heat 1 tablespoon of butter or olive oil in a skillet over medium heat.
  • Add the sliced mushrooms and cook for about 5-7 minutes until they are golden brown and tender. Season with a pinch of salt and pepper. Remove from heat and set aside.

3. Toast the Bread:

  • While preparing the avocado and mushrooms, toast the bread slices until they are golden and crispy.

4. Assemble the Avocado Toast:

  • Spread the mashed avocado evenly over the toasted bread slices.
  • Top with the sautéed mushrooms and tomato slices. Drizzle with extra virgin olive oil.

5. Garnish and Serve:

  • Garnish with fresh basil leaves for an added burst of flavor.
  • Serve immediately and enjoy your delicious mushroom avocado toast.
